Instructions:

✔ Chop celery and spring onions finely. Add them to a medium bowl along with tuna, lemon, mayonnaise and mustard. Mix to incorporate everything and sprinkle to taste. Book to use later.

✔ Put the eggs in a pot and add water until the eggs are covered. Bring to the boil and simmer for 5-6 minutes (for eggs passed by water) or 8-10 (for hard-boiled eggs).

✔ When cooked, put them in cold water immediately so they peel more easily. Cut them into wedges or halves.

✔ Place the tuna mixture and eggs on a few leaves of roman lettuce. Add the tomatoes and sprinkle olive oil on top. Splash to taste.

Council:

✔ If you sprinkle on the boiled eggs a generous amount of cumin, curry or paprika, you will get a very interesting mix of flavors. Don’t forget the salt and pepper!

✔ If you don’t like mayonnaise you can replace it with the classic French vinaigrette. Simply mix two tablespoons of wine vinegar (red or white), squeeze a lemon, add 5 tablespoons extra virgin olive oil, 2 tablespoons Dijon mustard and salt and pepper to taste. Mix it with tuna for a fresh and delicious flavor without using mayonnaise.
